KETO PECAN SNOWBALLS
Otherwise known as Wedding Cookies... makes a wonderful crunchy cookie with a sweet kick!
Servings: 20 cookies
Ingredients
- 8 TBSP Butter I use Kerrygold.
- 1 1/2 TSP Vanilla extract
- 1/4 TSP Salt
- 1 1/2 CUPS Almond flour I like Kirkland from Costco.
- 3/4 CUP Powdered Keto sugar I like Just Like Sugar Powdered.
- 1 CUP Chopped pecans
- 1/4 CUP Powdered Keto sugar For coating cookie after baking.
Instructions
- Pre-heat oven to 350F degrees. Mix all ingredients except pecans. I use hand mixer. Add pecans and mix well. Form into ball shapes. Line on cookie sheet and place in FREEZER for 15-20 minutes. Bake for 15 minutes. Cool for 10. Roll in the remaining powdered sugar.
