Great with coffee on Christmas morning… or any Tuesday. This pound cake is a staple in my house and we have made it several times.

KETO CHOCOLATE CHIP POUND CAKE

Regular pound cake recipe with a few added ingredients. One of my favorites.

Ingredients

  • 8 TBSP Melted butter I use Kerrygold.
  • 8 OZ Cream Cheese soften
  • 1 1/2 TSP Vanilla extract
  • 1 3/4 CUPS Erythritol I use Anthony's.
  • 1 TBSP Coco powder unsweetened I use Hersey's.
  • 1/2 TSP Salt
  • 1 1/2 TSP Baking powder
  • 8 Eggs
  • 2 1/2 CUPS Almond flour I use Kirkland from Costco.
  • 1/2 CUP Sugar free chocolate chips I use Lily's baking chips.

Instructions

  • Pre-heat 350F degrees. Use hand mixer. Mix melted butter, softened cream cheese and erythritol. Then add coco powder, vanilla extract, salt, baking powder and 4 eggs. Mix. Add 4 remaining eggs. Mix. Add flour. Mix. Stir in chocolate chips. Pour into either one large bread loaf pan, or two smaller ones. Bake for 60 minutes or until fork slides out clean. Cool for 10 minutes, slice and eat!
