KKC KETO PIZZA
This is a thicker crust pizza perfect for the ketogenic lifestyle
Servings: 2 mini pizzas
Ingredients
PIZZA CRUST
- 2 eggs
- 1 1/2 CUPS almond flour
- 2 OZ cream cheese
- 1 CUP shredded mozzarella
- 1 TSP baking powder
- 1 TBSP garlic salt
- 1 TSP oregano
- 1 TSP xanthan gum
- 1/4 CUP parmesan cheese
PIZZA TOPPING
- 1 CUP shredded mozzarella
- 1 CUP reduced sugar pizza sauce
- pepperoni or sausage
Instructions
PIZZA CRUST
- Melt the cream cheese and shredded cheese in a large microwave safe mixing bowl. Microwave for 20 seconds, stir, then microwave 30 more seconds. Stir.Add in the dry ingredients. Stir. Lastly add in the eggs. Cut dough in two balls. Use a silicon spatula to press out and shape two circle crusts. May have to wet spatula to prevent the dough from sticking. Sprinkle Parmesan cheese.Bake at 350F for 8-10 minutes.
PIZZA TOPPING
- Increase the oven temp to 425F.After crust is pre-baked, add sauce, cheese and other keto meat toppings of your choice. Bake at 425F for 10 minutes or until cheese is melted to your liking.
