I can’t !!! I am so convinced that this is my childhood recipe! It taste JUST the same. My mother would be so mad at me saying that. She knows that I can’t get enough of her peanut butter fudge. This version is better for my low carb low sugar lifestyle. This ends up with about 1 gram of sugar in each cut square and full of wonderful fats from the butter to not only help you reminisce of your childhood, but it helps keep you feeling full! KETO PEANUT BUTTER FUDGE

MY FAVORITE! Keto peanut butter fudge reminded me of my youth. Indulge in creamy guilt free peanut butter fudge!

Ingredients

  • 1/2 CUP butter I use Kerry Gold
  • 1/4 CUP heavy whipping cream
  • 1 CUP keto brown sugar sweetener I use Just Like Sugar Brown
  • 1 CUP keto sweetener I use Anthony’s erythritol
  • 1 1/2 CUP sugar free/reduced sugar peanut butter I use Simply Jif
  • 1 TSP vanilla

Instructions

  • In a sauce pan, combine butter, HWC, and both sweeteners. Bring to boil. Stir and simmer for 2-3 minutes.
    Remove from heat.
    Add peanut butter and vanilla. Mix well.
    Pour into parchment lined pan. We use 8 X 8 glass dish. Cool completely and cut into squares. Store in refrigerator.
